Ingredients
- 1 packet White Wings Unbelievably Good Banana Bread
- 80g vegetable oil
- 2 medium (196g) ripe bananas, mashed
- 80mL water
- 160mL coconut cream or plant-based milk of choice
- 1 cup chopped pecans
- Vegan ice cream, to serve
Sticky Caramel Sauce
- 100mL full fat coconut cream
- 1 1/2 cups CSR brown sugar
- Pinch of sea salt
Method
1. Pre-heat oven to 170°C (conventional). Grease the insides of 12 ramekins.
2. Prepare White Wings Unbelievably Good Banana Bread mix as per pack instructions, fold in 3/4 cup of chopped pecans.
3. Divide mixture evenly among ramekins. Bake for 30-35 minutes or until a skewer inserted into the middle comes out clean.
4. Caramel sauce: place the brown sugar, coconut cream and sea salt in a saucepan on medium heat. Bring to boil and reduce until thick and sticky.
5. Remove puddings from tray. Drizzle over a generous amount of caramel sauce, top with remaining chopped pecans. Serve while warm with a scoop of ice cream.
