Banoffee Pie

Did somebody say pie? This Banoffee Pie is made of four delicious layers: crust, caramel, fresh bananas and whipped cream.

Ingredients

Pastry:

  • 1½ cups (225g) White Wings Plain Flour
  • 1 tbsp CSR Soft Icing Mixture
  • 140g cold butter, chopped
  • 1 egg yolk
  • 2 tbsp cold water

Filling:

Topping:

  • 2 large bananas (460g), sliced thinly
  • 300ml thickened cream, whipped

Method

  1. Begin by making the pastry. Process flour, sugar and butter until crumbly; add egg yolk and the water, process until ingredients come together. Knead dough on floured surface until smooth. Wrap in plastic wrap; refrigerate 30 minutes.
  2. Preheat oven to 200°C
  3. Place tin on an oven tray; line pastry with baking paper, fill with dried beans or rice. Bake 10 minutes. Carefully remove paper and beans; bake for a further 10 minutes. Cool.
  4. Meanwhile, place condensed milk, butter, sugar and syrup in a medium saucepan over medium heat, stirring continuously, for 16 minutes or until mixture is caramel-coloured. Stand for 5 minutes.
  5. Pour filling into cooled pastry case; cool. Just before serving, arrange banana slices on caramel and top with cream. Sprinkle with ground nutmeg, if you like.
