Cinnamon Apple Pecan Cake

Apple and cinnamon are both beautifully rich flavours, but they taste even better when combined in this cake topped with pecans.
Ingredients
- 1 pack White Wings Vanilla Cake
- 1 (59g) egg
- 1 cup (250ml) water
- 1 pack whole pecans to decorate
- 60ml (3 tbsp) water
Method
- Preheat oven to 160ºC conventional or 140ºC fan-forced. Grease a 6cm deep x 20cm round cake pan. Line the base with baking paper.
- Place the cake mix, egg and water into a small mixing bowl. Using electric mixer beat on low speed for 30 seconds to combine. Increase speed to medium and mix for 3 minutes, scraping down sides of bowl occasionally.
- Dice one peeled and cored apple into 1 cm cubes and fold them into the batter. Pour batter into prepared pan.
- Bake for 55-60 minutes or until a skewer inserted into the center comes out clean. Let cool for 10 minutes in pan before turning onto a wire rack to cool completely. Time may vary depending on oven.
- Place frosting mix and water in a small mixing bowl. Using electric mixer beat on low speed for 30 seconds to combine. Increase speed to high and mix for 4 minutes, scraping down sides of bowl occasionally.
- Decorate with whole pecans.
