Corn & Zucchini Fritters

Create a café-style breakfast at home with these savoury corn and zucchini fritters. Fluffy pancakes stuffed with veggies - simply delicious!
Ingredients
- 1 packet White Wings Unbelievably Good Vanilla Pancakes
- 250mL water
- 375mL oat milk, or plant-based milk of choice
- 1 large zucchini, grated & excess water drained
- 1 cup canned corn, drained
- 1/4 cup spring onion, chopped
- 1/2 tsp paprika
- Salt & pepper, to taste
- Olive oil, for cooking
- Praise Vegan Aioli, to serve
Method
- Prepare White Wings Unbelievably Good Vanilla Pancake mix as per pack instructions.
- Stir in zucchini, corn, spring onion & paprika. Season to taste.
- Heat a pan with a drizzle of olive oil on medium heat.
- Pour 1/4 cup of batter into the pan. Cook fritters on each side for 2-3 minutes or until golden.
- Serve fritters immediately with a side of Praise Vegan Aioli.
