Corn & Zucchini Fritters

Create a café-style breakfast at home with these savoury corn and zucchini fritters. Fluffy pancakes stuffed with veggies - simply delicious!


  • 1 packet White Wings Unbelievably Good Vanilla Pancakes
  • 250mL water
  • 375mL oat milk, or plant-based milk of choice
  • 1 large zucchini, grated & excess water drained
  • 1 cup canned corn, drained
  • 1/4 cup spring onion, chopped
  • 1/2 tsp paprika
  • Salt & pepper, to taste
  • Olive oil, for cooking
  • Praise Vegan Aioli, to serve


  1. Prepare White Wings Unbelievably Good Vanilla Pancake mix as per pack instructions.
  2. Stir in zucchini, corn, spring onion & paprika. Season to taste.
  3. Heat a pan with a drizzle of olive oil on medium heat.
  4. Pour 1/4 cup of batter into the pan. Cook fritters on each side for 2-3 minutes or until golden.
  5. Serve fritters immediately with a side of Praise Vegan Aioli.
