Pancakes with Caramelised Banana, Coconut & Caramel Sauce

Up your pancake game with sliced banana drizzled with delectable caramel and covered in a sprinkling of toasty coconut. Who said you couldn't have dessert for breakfast?!
Ingredients
- 1 packet White Wings Unbelievably Good Vanilla Pancakes
- 250mL water
- 375mL oat milk, or plant-based milk of choice
- 4 slightly firm bananas, peeled & sliced length ways
- 1/2 cup CSR Brown Sugar
- 50mL CSR Squeeze Golden Syrup
- 3 tbsp full fat coconut cream
- Toasted coconut flakes, to serve
Method
- Prepare and cook White Wings Unbelievably Good Vanilla Pancake mix as per pack instructions.
- To make the caramel sauce: melt the brown sugar, CSR Squeeze Goden Syrup & coconut cream in the pan. Heat until bubbly and reduce until slightly thickened. Set aside.
- Heat a pan on medium heat. Fry the bananas flat side down until golden in colour, flip, then fry on opposite side.
- To serve, layer the pancakes topping with slices of banana. Drizzle over the caramel sauce and sprinkle with toasted coconut flakes.
Tip: Serve with a spoonful of coconut yoghurt or vegan ice-cream, if desired.
