Mini Australia Day Pavlovas

Do you want to win desserts on Australia Day? It's not that hard to do, as long as you decorate your mini pav's like this, you'll have everyone's vote!

Ingredients

  • 1 x White Wings Pavlova Magic Egg
  • 140ml water
  • 130g CSR Caster Sugar
  • 300ml dollop thick cream
  • 2 kiwis, peeled, quartered and sliced
  • ¼ cup desiccated coconut, toasted
  • 8 x Cadbury’s Caramelo Koalas

Method

  1. Preheat oven to 170°C conventional/150°C fan forced. Using electric beaters or whisk, combine the Pavlova Magic and water in a bowl for 5 minutes until thick and glossy before gradually adding the caster sugar.
  2. Spoon 3 heaped tablespoons of meringue mixture onto a baking tray lined with baking paper.
  3. Divide mixture evenly to make 8 meringues of approximately 1cm diameter.
  4. Reduce oven temperature to 120°C conventional/100°C fan forced and bake meringues on the middle rack for 1 hour.
  5. After 1 hour, turn oven off and allow meringues to cool completely before opening door.
  6. While meringues cool, whisk cream into thick peaks.
  7. Top each meringue with whipped cream and fresh kiwi fruit.
  8. Sprinkle with toasted coconut and finish with a Caramelo Koala sitting in each nest.
